So my question is, why wouldn't we be able to run a 8 or 9 inch wide wheel with a lower offset if we stretched the tires like my above picture?

Height as shown. Obviously, they will pull in more as you lower it more. But...I don't think yours will fit without a camber kit.

You can't get too aggressive with the Fit. As you can see, 16x8 +20 is already flush.

19x8.5 et30 in the rear isnt flush enough for me so i put on my 15mm spacer on the rear and got this:

... running with 245/35R20 and eibach springs. No rubbing at all and not even needing to roll the rear fenders. The rims are exactly flush with the fender.
